Sourdough Cracked Wheat Rolls
Simple to make, these sourdough rolls have the added flavor and texture of cracked wheat.

Ingredients

  • 3/4 cup water
  • 1 tablespoon vegetable oil
  • 1 cup Sourdough Starter
  • 3 cups bread flour
  • 1/3 cup cracked wheat
  • 1 tablespoon granulated sugar
  • 2 teaspoons salt
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast

Instructions

  • Have water and oil at 80ºF and all other ingredients at room temperature. Place ingredients in pan in the order recommended by manufacturer. Select dough/manual cycle. Do not use the delay. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. When cycle is complete, continue with next step.
  • Turn dough onto lightly floured surface; punch down to remove air bubbles. Divide dough into 8 pieces. On lightly floured surface, roll each piece to a 6×4-inch rectangle. Starting with the longer side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal. Place on greased cookie sheet. Cover; let rise until doubled.
  • Preheat oven to 400ºF.
  • With sharp knife, make a lengthwise slash down the center of each roll. For a crustier crust, brush with cold water. Bake for 20 to 25 minutes or until golden brown. Remove from cookie sheet; cool on wire rack.

Can I use your sourdough yeast? I just want a loaf of bread not rolls.

Hi Laurayne – The Platinum Instant Sourdough (PIS) is to be used in place of one (0.25oz/7g) packet or 2 1/4 teaspoons of dry yeast in a recipe. This recipe uses a sourdough culture that contains flour and water, so the PIS product can not be equally substituted. If you’re looking for bread machine recipes to use the PIS, you must select a recipe for a batch/loaf size that calls for a full standard packet (0.25oz/7g) or 2 1/4 teaspoons of dry yeast. Then replace the packet of yeast called for in the recipe with the full packet of the Platinum Instant Sourdough. Below are some suggestions from our Bread Machine Recipes collection:
