Bread Machine New York Rye Bread

This dark and flavorful rye bread is especially delicious topped with deli cuts of meat and cheese. Don't forget to pass the mustard!

Ingredients

Medium Loaf (1 1/2-pound bread machine)

  • 1 cup water
  • 3 tablespoons vegetable oil
  • 3 tablespoons molasses
  • 2 cups bread flour
  • 1 cup rye flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon fennel seed
  • 1 1/2 teaspoons caraway seed
  • 4 teaspoons cocoa
  • 1 1/2 teaspoons instant coffee (granules)
  • 3 tablespoons buttermilk powder
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast

Large Loaf (2-pound bread machine)

  • 1 1/3 cup water
  • 1/4 cups vegetable oil
  • 1/4 cups molasses
  • 2 2/3 cups bread flour
  • 1 1/3 cups rye flour
  • 2 teaspoons salt
  • 3/4 teaspoon fennel seed
  • 2 teaspoons caraway seed
  • 5 teaspoons cocoa
  • 2 teaspoons instant coffee (granules)
  • 1/4 cup buttermilk powder
  • 1 tablespoon Red Star Active Dry Yeast

Glaze

  • 2 tablespoons water (cold)
  • 1 tablespoon cornstarch
  • 1/2 cup water (boiling)

Instructions

  • Place room temperature ingredients in pan in order recommended by manufacturer. Select BASIC setting and MEDIUM crust. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time.
  • Prepare glaze: Whish all glaze ingredients together.
  • Right before baking cycle starts, open lid and gently brush top of loaf with cornstarch glaze. For glossy crust, brush again with cornstarch solution immediately after removing from pan. Remove from pan; cool on wire rack.
