  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 teaspoon cider vinegar

  • 2/3 cup potato starch
  • 1/3 cup tapioca flour
  • 1/2 cup dry milk powder
  • 3 1/2 teaspoons xantham gum

Can I use one on one gluten free flour in sourdough bread recipe instead of rice flour and other ingredients. Just add together measurements of all ingred. to get exact amount I need. Would that work.

Hi Elenor,
You can certainly try. Keep in mind that the consistency may be different, so adjust the liquids/flour as needed.

Is there anything I could substitute for the ricotta cheese?

Red Star Yeast | Reply

Hi Barbara,
You can try cottage cheese, cream cheese, Greek yogurt or sour cream.

I just bought your instant sourdough dry culture. When would I add it in this particular recipe.

Red Star Yeast | Reply

Hi Padi,
The Platinum Instant Sourdough Yeast is not gluten-free. https://redstaryeast.com/red-star-platinum-instant-sourdough-yeast/
This product is to be used in recipes (not gluten-free recipes) that call for 1 packet – or 2 1/4 teaspoons of dry yeast. Simply substitute in one packet of the Platinum Instant Sourdough for one packet of dry yeast to give any recipe an authentic sourdough flavor.
I hope you will find this information helpful.
Happy baking!

I am dairy as well as gluten intolerant; what can I use in place of the dry milk powder?

Red Star Yeast | Reply

Hi Rhonda,
You could try soy, rice or coconut powder in place of the dry milk powder.

Happy baking!
Carol
