Ingredients

Small Loaf (1-pound bread machine)

  • 3/4 cup plus 3 tablespoons water
  • 2 teaspoons vegetable oil
  • 2 1/4 cups bread flour
  • 1/2 cup old fashioned rolled oats
  • 2 teaspoons dried minced garlic
  • 1 tablespoon plus 1 1/2 teaspoons dried minced onion
  • 1 tablespoon plus 1 1/2 teaspoons poppy seeds
  • 1 tablespoon plus 1 1/2 teaspoons sesame seeds
  • 2 teaspoons caraway seeds
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons Red Star Active Dry Yeast

Medium Loaf (1 1/2-pound bread machine)

  • 1 1/2 cups plus 1 tablespoon water
  • 1 tablespoon vegetable oil
  • 3 cups bread flour
  • 1 cup old fashioned rolled oats
  • 1 tablespoon dried minced garlic
  • 2 tablespoons dried minced onion
  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds
  • 1 tablespoon caraway seeds
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast

Large Loaf (2-pound bread machine)

  • 1 1/2 cups plus 3 tablespoons water
  • 1 tablespoon plus 2 teaspoons vegetable oil
  • 4 cups bread flour
  • 1 1/2 cups old fashioned rolled oats
  • 1 tablespoon plus 2 teaspoons dried minced garlic
  • 2 tablespoons plus 1 1/2 teaspoons dried minced onion
  • 2 tablespoons plus 1 1/2 teaspoons poppy seeds
  • 2 tablespoons plus 1 1/2 teaspoons sesame seeds
  • 1 tablespoon plus 2 teaspoons caraway seeds
  • 2 1/2 teaspoons salt
  • 3/4 teaspoon black pepper
  • 1 tablespoon Red Star Active Dry Yeast

Topping

  • 1 1/2 teaspoons warm water
  • 1/8 teaspoon cornstarch
  • 1/2 teaspoon dried minced garlic
  • 3/4 teaspoon dried minced onion
  • 3/4 teaspoon poppy seeds
  • 3/4 teaspoon sesame seeds
  • 1/2 teaspoon caraway seeds
  • 3/4 teaspoon kosher salt
  • Pinch of black pepper

Instructions

  • Have liquid ingredients at 80°F and all other ingredients at room temperature. Place ingredients in pan in the order recommended by manufacturer. Select basic cycle and medium/normal crust. Do not use delay timer. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time.
    When machine begins bake cycle, brush top of bread with 1 1/2 teaspoons water combined with ⅛ teaspoon cornstarch. In a small bowl, mix together all seasonings. Sprinkle on top of bread.
