Small Loaf (1-pound bread machine)

  • 3/4 cup plus 2 tablespoons water
  • 1/2 cup cracked wheat
  • 1 tablespoon plus 1 teaspoon vegetable oil
  • 2 1/4 cups bread flour
  • 1 tablespoon plus 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons Red Star Active Dry Yeast

Medium Loaf (1 1/2-pound bread machine)

  • 1 1/4 cups plus 1 tablespoon water
  • 3/4 cup cracked wheat
  • 2 tablespoons vegetable oil
  • 3 cups bread flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons salt
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast

Large Loaf (2-pound bread machine)

  • 1 3/4 cups water
  • 1 cup cracked wheat
  • 2 tablespoons plus 2 teaspoons vegetable oil
  • 4 cups bread flour
  • 2 tablespoons plus 2 teaspoons granulated sugar
  • 2 teaspoons salt
  • 1 tablespoon Red Star Active Dry Yeast

Instructions

  • Prepare cracked wheat: Bring water to a boil. Place cracked wheat in small mixing bowl and pour water over it; stir to fully incorporate wheat. Let cool to 80ºF.
  • Have cracked wheat mixture at 80ºF and all others at room temperature. Place the cracked wheat mixture in the pan first, then add remaining ingredients to pan in the order listed. Select basic cycle and medium/ normal crust. Do not use the delay timer. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. Remove bread when cycle is finished; cool on wire rack before slicing.

Can you substitute maple syrup for sugar using the same amounts?

Hi Patrick,

Yes in this recipe since the amount of sugar is small it would be fine. Just keep in mind of the added moisture from the maple syrup versus dry sugar. You may have to add a tad bit more flour. Go by look and feel of your dough before adjusting.

Can you just use the dough setting on the bread machine for this cracked wheat bread and then bake in the oven.
