How to Use Platinum Yeast in a Stand Mixer or for Hand-Kneading
Simply substitute one full packet of Platinum Instant Sourdough for one standard (0.25 ounce/7 gram) packet or 2 ¼ teaspoons of dry yeast in any recipe. A full packet of Platinum Instant Sourdough must be used to get the correct amount of yeast and flavor.
Follow the recipe instructions or blend Platinum Instant Sourdough with dry ingredients.
Add very warm liquid — make sure it’s not too hot to touch (about 120˚F).
See our guide to baking with yeast for more information on all bread making steps.
Use Platinum Instant Sourdough to add a mild sourdough flavor to your favorite yeast bread recipes. Only use recipes that call for one standard (0.25 ounces / 7 grams) packet or 2 ¼ teaspoons of instant yeast.
Since the packet contains a blend of yeast and dried sourdough culture, only full packets of Platinum Instant Sourdough should be used in recipes.
Platinum Instant Sourdough is NOT intended to be used in a traditional sourdough recipe that calls for a sourdough starter. Since a traditional sourdough starter contains flour and water, it cannot be replaced with this product.
Platinum Instant Sourdough is a living organism and must be handled properly to ensure optimum performance. Never expose yeast to high temperatures during storage or use.
If you are unsure about the activity of your yeast, test it using our Yeast Activity Test.
For best results, use the yeast prior to the best if used by date stamped on the package. This date is 1 year from the date the yeast was packaged.
The yeast packets are flushed with nitrogen at the time of packaging to remove oxygen.
Don’t forget that yeast is a living organism, and its freshness and shelf life are dependent on how the yeast is stored. Dry yeast will lose its leavening power faster if exposed to air, moisture or heat, even when it is still in an unopened package.
