A rustic & chewy loaf filled with holes ready to be trapped with a drizzle of olive oil. This ciabatta recipe is a perfect vessel for bruschetta or for making sandwiches! 🥪Ingredients 👇Poolish (Makes 4 cups)1 1/4 c plus 2 1/2 tbsp (179g) bread flour 3/4 c plus 1 tbsp (195g) water2 tbsp (15g) white whole wheat flour 1/16 tsp Platinum YeastDoughPoolish1 c (240g) water 2 tbsp (28g) olive oil 1/2 tsp (1.5g) Platinum Yeast 3/4 tsp dried basil 3/4 tsp dried oregano 3/4 tsp dried parsley 1/2 tsp dried rosemary 2 1/2 c (318g) bread flour 1/2 c (62g) white whole wheat flour 1 tbsp (9g) kosher saltStart with a poolish the night before, let it rest for 14-16 hours. Mix water, oil, yeast, basil, oregano, parsley, and rosemary with the poolish. Add flours and salt, beat at a low speed for 4 min. Increase the speed to medium and beat for another 5-6 min.Grease a large bowl. Turn out the dough onto a heavily floured surface and shape into a round. Place the dough in the bowl, cover, and let rise for 2 1/2 hours. Every 30 minutes, fold the dough in bowl. Place 2 sheets of parchment paper on a work surface and dust with flour. Turn out the dough and shape into a 14x10 in. rectangle. Dimple the surface with your fingertips. Using a bench scraper, cut the dough in half lengthwise. Transfer halves to parchment sheets.Gently stretch each portion into 15 1/2 x 5 in. rectangles. Dimple again, cover with plastic, and let them rise for 1 hour.Preheat the oven to 450 F. Line 2 baking sheets with parchment paper.Turn out the portions onto prepared pan.Bake until golden, internal temp should reach 205 F. (12-15 min.) Let them cool completely on wire racks.
