Gluten Free Italian Herb Bread

Gluten-free yeast bread with added Italian seasoning. Serve with your favorite Italian dish, or enjoy as a sandwich.
Yield 1 (9×5-inch) loaf
Ingredients
- 1 1/2 cups water (110-115°F)
- 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
- 3 large eggs (room temperature)
- 1/4 cup vegetable oil
Dry Mixture
- 1 cup white bean flour
- 1 cup white rice flour
- 1 cup potato starch
- 1/2 cup tapioca flour
- 1 tablespoon xanthan gum
- 1 1/2 teaspoons table salt
- 3 tablespoons granulated sugar
- 1 tablespoon dried mixed Italian herbs
Instructions
- Prepare pan: Grease a 9×5-inch loaf pan; set aside.
- Add warm water to stand mixer bowl. Stir in yeast; let sit 5-10 minutes.
- Add eggs and oil to yeast mixture. Using paddle attachment, mix until blended.
- In a medium bowl, whisk together all dry mixture ingredients until thoroughly combined. With mixer on low speed, gradually add the dry mixture to the wet mixture; mix until well blended. On medium speed, beat about 5 minutes. Pour batter into pan. Cover; allow to rise approximately 1 hour.
- Preheat oven to 350°F.
