Platinum Yeast is the original, 2-in-1 premium instant baker’s yeast blended with a dough improver. This unique baker’s yeast formula takes the guesswork out of baking with yeast. Whether you’re new to baking or an expert baker, Platinum Yeast will improve the results of your homemade baked concoctions, from bread to pizza crust and beyond.

Benefits of Baking with Platinum Yeast

  • Contains a premium instant yeast, giving a consistent rise to all your baked goods. Plus, there’s no need to proof the yeast; simply add it to your flour and other dry ingredients.
  • Contains dough enhancers that:
    • Strengthen and improve volume of dough and baked goods. These enzymes strengthen the gluten network, which helps to prevent dough from collapsing during the rise and also in the oven. This provides tolerance to the dough, especially if it is under-kneaded or over-proofed.
    • Extend the freshness shelf life of your baked goods. These enzymes slow the staling process, keeping your breads softer longer.

How to Use Platinum Yeast

How to Use Platinum Yeast in a Stand Mixer or for Hand-Kneading

  1. Blend the yeast directly with the flour and other dry ingredients. Be sure to avoid direct contact with the salt or sugar as this may decrease the activity of the yeast.
  2. Add warm liquid (about 120˚F). Make sure liquid is not too hot to touch.
  3. Continue with recipe instructions.

How to Use Platinum Yeast in a Bread Machine

  • Follow bread machine manufacture’s recommendations for ingredient order.
  • We recommend liquid temperatures around 80˚F.
  • For any ‘Dough’ or ‘Standard’ cycle, use ½ teaspoon of Platinum Yeast for each cup of flour in the recipe.
  • For ‘express’ bread machine cycles, Instant Yeast is required. Follow the machine manufacturer’s instructions for appropriate yeast amounts and liquid temperature.

Product FAQs

Platinum Yeast works great in any recipe, from breads and bagels to pizza and sweet rolls.

One (0.25oz or 7g) packet of yeast contains approximately 2 1/4 teaspoons of yeast.

Active Dry or Instant Yeast: Platinum Yeast may be substituted 1:1 for Active Dry or Instant Yeast. Platinum Yeast has a faster rate of action than active dry yeast; therefore, your dough may rise faster. Simply monitor your dough while it is rising and adjust the time as needed.

Fresh Cake Yeast: To convert between Dry Yeast and Fresh Cake Yeast OR determine the yeast requirements for your recipe, see our Yeast Conversion Chart.

See our guide to baking with yeast for more information on all bread making steps.

Platinum Yeast is a living organism and must be handled properly to ensure optimum performance. Never expose yeast to high temperatures during storage or use.

  • Store this product at a comfortable room temperature, away from heat sources.
  • This product may also be stored in the refrigerator or freezer; this is ideal for longer-term storage. Prior to use, take out only the number of packets you plan to use and bring to room temperature for about 20 – 30 minutes.

If you are unsure about the activity of your yeast, test it using our Yeast Activity Test.

If you have yeast remaining in an opened packet, fold the opening over itself to the level of the yeast (to keep it airtight) and secure it with tape or a clip. Label the packet with the date it was opened; refrigerate or freeze and use within four weeks.

For best results, use the package prior to the best if used by date stamped on the package.  This date is 2 years from the date the yeast was packaged.

The yeast packets are flushed with nitrogen at the time of packaging to remove oxygen.

Don’t forget that yeast is a living organism, and its freshness and shelf life are dependent on how the yeast is stored. Dry yeast will lose its leavening power faster if exposed to air, moisture or heat, even when it is still in an unopened package.
