How to Use Red Star All-Natural Active Dry Yeast

How to Use Red Star All-Natural Active Dry Yeast in a Stand Mixer or for Hand-Kneading

Proofing (dissolving) the yeast in warm liquid with sugar gives it a good start – the yeast feeds on the sugar for quick activation.

How to Proof Yeast:

  1. Using a one-cup liquid measuring cup, dissolve 1 teaspoon of granulated sugar in 1/2 cup warm (110-115°F) water. If you don’t have a thermometer, the tap water should be warm but NOT hot to the touch.
  2. Stir in one (0.25oz) packet (7g) or 2 1/4 teaspoons of dry yeast until there are no more dry yeast granules on top.
  3. In three to four minutes, the yeast will have absorbed enough liquid to activate and start to foam.
  4. After ten minutes, the foamy yeast mixture should have risen to the 1-cup mark and have a rounded top. If this is true, your yeast is very active and should be used in your recipe immediately. If the yeast did not rise to the 1-cup mark, discard this yeast.

If your recipe instructions do not include this rehydration step, decrease the total liquids in the recipe by 1/2 cup to account for the liquid you used to activate the yeast.

One (0.25 ounce or 7 gram) packet of yeast contains approximately 2 ¼ teaspoons of yeast.

Instant Yeast: Active Dry Yeast may be substituted 1:1 for Instant Yeast. Active dry yeast has a slower rate of action than instant yeast; therefore, your dough MAY take slightly longer to rise. Simply monitor your dough while it is rising and adjust the time as needed.

Red Star All-Natural Active Dry Yeast is a living organism and must be handled properly to ensure optimum performance. Never expose yeast to high temperatures during storage or use.

  • Store this product at a comfortable room temperature, away from heat sources.
  • This product may also be stored in the refrigerator or freezer; this is ideal for longer-term storage. Prior to use, take out only the number of packets you plan to use and bring to room temperature for about 20 – 30 minutes.
  • If you have yeast remaining in an opened packet, fold the opening over itself to the level of the yeast (to keep it airtight) and secure it with tape or a clip. Label the packet with the date it was opened; refrigerate or freeze and use within four weeks.

For best results, use the package prior to the best if used by date stamped on the package.  This date is 2 years from the date the yeast was packaged.

The yeast packets are flushed with nitrogen at the time of packaging to remove oxygen.

Don’t forget that yeast is a living organism, and its freshness and shelf life are dependent on how the yeast is stored. Dry yeast will lose its leavening power faster if exposed to air, moisture or heat, even when it is still in an unopened package.
