Ingredients

  • 3 cups bread flour
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/2 cup yellow cornmeal
  • 2 teaspoons dried chili powder
  • 2 teaspoons dried onion flakes
  • 1/2 cup plus 1 tablespoon warm water (110-115°F)
  • 1 cup fat-free refried beans
  • 3 tablespoons vegetable oil

Instructions

  • In stand mixer bowl, add 1 cup flour, yeast, sugar, salt, cornmeal, chili powder and onion flakes; mix well. Add warm water, oil and beans to flour mixture. Using a paddle attachment, blend on low speed for 30 seconds; beat on medium speed for 4 minutes.
  • Switch to dough hook attachment. Gradually stir in enough remaining flour to make a firm dough. Knead until smooth and elastic, about 5 to 7 minutes.
(NOTE: For hand mixing: following above steps, mix ingredients in large mixing bowl using a wooden spoon or dough whisk. Knead on floured surface until smooth and elastic.)
  • Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until indentation remains after poking dough with finger down to second knuckle, about 1 hour.
  • Turn dough onto lightly floured surface; punch down to remove air bubbles. Roll or pat into a 14×7-inch rectangle. Starting with shorter side, roll up tightly, pressing dough into roll. Pinch edges and taper ends to seal. Place in greased 9×5-inch loaf pan. Cover; let rise until indentation remains after touching.
  • Preheat oven to 375°F.
  • Bake for 30 to 40 minutes. Remove from pan; cool on wire rack.

The ingredients include a cup of beans but nowhere in the recipe does it indicate whether it is actually part of the bread or is it a serving suggestion?

Red Star Yeast | Reply

Hi Kat – The beans are added with the water and oil, see step 1: In stand mixer bowl, add 1 cup flour, yeast, sugar, salt, cornmeal, chili powder and onion flakes; mix well. Add warm water, oil and beans to flour mixture.
Happy baking!

“1 cup fat-free refried beans”

How can anything “fried” be “fat-free”?

Red Star Yeast | Reply

Hi Ed,
Great question! You can find ‘fat-free’ refried beans at most grocery stores. I believe that it’s how they process the beans. They are not necessarily ‘fried’.

Happy baking!
Carol
