Use a donut cutter to stamp out the donuts. Place each donut on a square of parchment, place on a sheet pan and cover loosely with plastic wrap. Gather extra pieces of dough, and roll into buns for filled donuts and place on a separate sheet pan also on their own square of parchment. Cover each pan loosely with plastic wrap. The filled donuts may take 45-50 minutes while the “traditional” donuts will proof faster, about 25-30 minutes.Second rise: Allow buns to rise in a warm area, no warmer than 90˚F, for 30-45 minutes or until barely doubled in size and are jiggly.Prepare glaze: Run the confectioner’s sugar through a sieve in a bowl and then stir in the remaining ingredients, mixing until smooth.Fill a Dutch oven a little less than half way with a neutral oil, like vegetable or Canola. Bring to 350ºF and keep steady at that temperature.Fry Donuts: Gently lower the doughnuts into the oil on the parchment and then use tongs to gently pull away the parchment. Fry for 2-3 minutes on each side or until gently golden. Remove the doughnuts using a spider and transfer to a paper towel lined cooling rack. While still warm but not steaming hot, dip in glaze.
