Gluten Free - Country Two-Step
This bread uses an interesting variation in putting the dough together. Most of the dry ingredients are combined with the liquid, heated to 150 degrees F. This allows the flour to absorb more moisture and results in a softer, more flexible product.

Wet Ingredients
  • 2 cup Water
  • 1 tsp Cider Vinegar
  • ¼ cup Canola Oil
  • 3 Eggs, large

Dry Ingredients
  • 2 cup Rice Flour
  • ½ cup Tapioca Flour
  • ½ cup Potato Starch
  • ½ cup Chick-Pea Flour
  • 4+1/2 tsp Xanthan Gum
  • 1+1/2 tsp Salt
  • 3 TBSP Sugar
  • 3 TBSP Non-dairy Creamer
  • 2+1/4 tsp Active Dry Yeast
  1. Stir together in a bowl: rice flour, tapioca flour, potato starch, chick-pea flour, and salt.

  2. Pour 2 cups 150°F water into baking pan.

  3. Add to water in baking pan: cider vinegar and canola oil.

  4. Add dry ingredients (rice flour, tapioca flour, potato starch, chick-pea flour, and salt): start machine on Dough cycle.

  5. When kneading is finished, remove pan from machine until cooled to room temperature, a minimum of 2 hours to overnight.

  6. While mixture is cooling, combine thoroughly and set aside: xanthan gum, sugar, non-dairy creamer, and Active Dry Yeast.

  7. When mixture is cooled sufficiently, beat 3 large eggs lightly and add to baking pan mixture.

  8. Place pan in bread machine, seating carefully. Set bread machine on WHITE/NORMAL or GLUTEN FREE; and press START.

  9. When eggs are beaten in (about 1 minute), carefully add combined dry ingredients while machine continues mixing.

  10. When baking cycle finishes, test for doneness with a toothpick. If not quite done, leave in machine for an extra 10 minutes.

  11. Remove from bread machine when bake cycle is complete. Invert pan and gently shake to remove bread. Cool upright on a rack before slicing.

  12. NOTE: You can substitute Instant (Quick Rise) in place of Active Dry Yeast in gluten free recipes. When using Instant Yeast, expect your batter/dough to rise faster - about 50% faster. Adjust your rise times accordingly. Traditional methods: substitute equal amounts; Bread Machine: use ½ tsp Instant Yeast OR ¾ tsp Active Dry Yeast per cup of flour in your recipe.       The powdered non-dairy creamer is added for flavor. No specific ingredients – use any brand you prefer.
