Homemade bread is the base for this delicious breakfast sandwich. Filled with eggs, cheese and ham, then grilled to perfection, it's the perfect way to start your day! And it's Gesine Prado approved!

Ingredients

  • 4 tablespoons unsalted butter, divided
  • 3 large eggs
  • Salt and pepper, to taste
  • Fresh thyme, to taste (optional, or use your favorite herbs)
  • 2 slices Simple White Bread for Beginners
  • 2 slices cheddar cheese
  • 1 slice black forest ham

Instructions

  • In a non-stick, 10-inch skillet, melt 2 tablespoons of the butter over medium heat.
  • In a small bowl, whisk together the three eggs along with salt and pepper to taste.
  • Add the eggs to the skillet and top with herbs.
  • Once the eggs have just begun to set along the edges but are still a bit loose in the middle, add the two slices of bread, bottom sides facing each other and spaced about 1/2-inch apart.
  • Place a lid on the pan to steam the eggs to set completely.
  • Flip the eggs and bread slices so that the egg is now on top and the bread on the bottom. Place a slice of cheese on each side and then add the ham. Fold up the sides of the egg that are overhanging the bread to make a neat parcel and flip over one side of bread onto the other to create a sandwich.
  • Move the sandwich to a plate while you melt the remaining 2 tablespoons of butter over medium heat. Place the sandwich back on the heat, grilling each side for about 2 minutes, or until each side is golden brown and crispy.
  • Serve warm.
