Yield 2 (12-inch) pizzas Print Recipe Pin Recipe 2 Reviews IngredientsDough2 1/4 cups bread flour, divided (divided)1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast1/2 cup Parmesan cheese (grated)1/2 teaspoon table salt1/4 teaspoon pepper1 cup warm water (120 -130°F)Pizza sauce and Toppings1 pound pork sausage1/4 cup chopped onion1/2 teaspoon cumin seeds1/2 teaspoon fennel seeds1 (15oz) can tomato sauce1 1/2 teaspoon Italian seasoning2 cups (8oz) shredded Mozzarella cheese2 cups (8oz) shredded Cheddar cheese1/4 cup grated Parmesan cheese InstructionsPrepare pans: grease two 12-inch pizza pans. Set aside.Preheat oven to 425°F.In stand mixer bowl, add 1 cup flour, yeast, Parmesan cheese, salt and pepper; mix well. Add warm water to flour mixture. Using a paddle attachment, blend on low speed for 30 seconds. Peat on medium speed for 3 minutes.Switch to dough hook attachment. Gradually stir in enough remaining flour to make a firm dough. Knead until smooth and elastic, about 5 to 7 minutes.(NOTE: For hand mixing: following above steps, mix ingredients in large mixing bowl using a wooden spoon or dough whisk. Knead on floured surface until smooth and elastic.)Cover dough; let rest while preparing toppings.Prepare toppings: In large fry pan, lightly brown sausage; drain. Add onion, cumin and fennel seeds. Cook until onion is soft; set aside. In a medium bowl, combine tomato sauce and Italian seasoning; set aside.Punch down dough. Divide dough into 2 equal parts. With well-floured or greased fingers, press each half into greased prepared pans, forming a rim around edge. Spread half of sauce over dough. Spoon half of sausage mixture evenly over sauce.
