Bread Machine Banana Date Bread
A rich loaf studded with dates and the full flavor of banana is sure to become a favorite. Easy to make in the bread machine.
Small Loaf (1-pound bread machine)
- 1/4 cup water
- 4 teaspoons vegetable oil
- 1/2 cup sliced bananas
- 1 large egg
- 2 1/4 to 2 1/3 cups bread flour
- 1 teaspoon salt
- 4 teaspoons packed brown sugar
- 1 1/2 teaspoons Red Star Active Dry Yeast
- 1/4 cup dates (chopped)
Medium Loaf (1 1/2-pound bread machine)
- 1/4 cup water
- 2 tablespoons vegetable oil
- 3/4 cup sliced bananas
- 2 large eggs
- 4 cups bread flour
- 2 teaspoons salt
- 2 tablespoons packed brown sugar
- 1 tablespoon Red Star Active Dry Yeast
- 1/2 cup dates (chopped)
Have all liquid ingredients at 80°F, and all others at room temperature. Measure ingredients into bread pan (except dates) in the order recommended by manufacturer. Select White/Basic cycle. Select loaf size and Medium crust. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. Add dates 5 minutes before the end of the last kneading cycle. When Bake cycle is completed, remove bread from pan; cool on wire rack.
