Bread Machine 7-Grain Salt-Free Whole Wheat Bread

Soaking grains in boiling water is an old European technique. Grains absorb moisture, yielding a moist and nutritious bread. Flavor is added with a hint of orange.

Yield 1 loaf

Ingredients

Medium Loaf (1 1/2-pound bread machine)

  • 1 cup water
  • 2 teaspoons vegetable oil
  • 4 teaspoons honey
  • 2/3 cup 7-grain cereal (See note)
  • 2 cups whole wheat flour
  • 4 teaspoons vital wheat gluten
  • 1 orange rind, grated
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast

Large Loaf (2-pound bread machine)

  • 1 2/3 cups water
  • 1 tablespoon vegetable oil
  • 2 tablespoons honey
  • 1 cup 7-grain cereal (See note)
  • 3 cups whole wheat flour
  • 2 tablespoons vital wheat gluten
  • 1 orange rind, grated
  • 1 tablespoon Red Star Active Dry Yeast

Instructions

  • Heat water to boiling. Place ingredients in bread pan in order listed. Select BASIC setting. Using delay feature on bread machine, program bread to be finished in 12 to 24 hours. Once cycle starts mixing, check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. Remove bread when cycle is finished; cool.
