Bread Machine Cranberry Nut Bread

This delicious sweet bread is chock-full of almonds and dried, sweetened cranberries, making it the perfect bread for a holiday breakfast, or for that matter, any time of the year. Made with a bread machine.
Cranberry Nut Bread
Yield 1 loaf

Ingredients

Small Loaf (1-pound bread machine)

  • 1/3 cup milk
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 1 teaspoon almond extract
  • 1 medium egg
  • 1 3/4 cups bread flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons orange zest
  • 1 teaspoon Red Star Active Dry Yeast
  • 1/3 cup dried cranberries
  • 1/4 cup slivered almonds

Medium Loaf (1 1/2-pound bread machine)

  • 1/2 cup milk
  • 2 tablespoons water
  • 3 tablespoons vegetable oil
  • 1 1/2 teaspoons almond extract
  • 2 large eggs
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons salt
  • 3 tablespoons granulated sugar
  • 2 teaspoons orange zest
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
  • 1/2 cup dried cranberries
  • 1/3 cup slivered almonds

Large Loaf (2-pound bread machine)

  • 1/2 cup milk
  • 1/4 cup plus 1 tablespoon water
  • 1/4 cup vegetable oil
  • 2 teaspoons almond extract
  • 2 large eggs
  • 2 1/2 cups bread flour
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons salt
  • 1/4 cup granulated sugar
  • 2 1/2 teaspoons orange zest
  • 1 tablespoon Red Star Active Dry Yeast
  • 2/3 cup dried cranberries
  • 1/2 cup slivered almonds

Instructions

  • Have water at 80ºF and all other ingredients at room temperature. Place ingredients (except cranberries and almonds) in pan in the order suggested by manufacturer. Select Basic cycle and medium/normal crust. Cranberries and almonds can be added 5 minutes before the end of the last kneading. Do not use the delay timer. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. Remove bread when cycle is finished; cool on wire rack.
