Bread Machine Apple Cinnamon Raisin Bread

Apple juice, cinnamon, and raisins - a subtle blend of flavors, a marvelous bread machine loaf!
Apple Cinnamon Raisin Bread
Yield 1 loaf

Ingredients

Small Loaf (1-pound bread machine)

  • 1/4 cup water
  • 1/2 cup apple juice
  • 2 teaspoons vegetable oil
  • 2 1/2 cups bread flour
  • 2 teaspoons granulated sugar
  • 3/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoon Red Star Active Dry Yeast
  • 1/2 cup raisins

Medium Loaf (1 1/2-pound bread machine)

  • 1/4 cup plus 1 tablespoon water
  • 3/4 cup apple juice
  • 1 tablespoon vegetable oil
  • 3 cups bread flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
  • 3/4 cup raisins

Large Loaf (2-pound bread machine)

  • 1/4 cup water
  • 1 cup apple juice
  • 1 tablespoon plus 2 teaspoons vegetable oil
  • 4 cups bread flour
  • 1 tablespoon plus 2 teaspoons granulated sugar
  • 1 1/4 teaspoons salt
  • 1 tablespoon plus 1 teaspoon ground cinnamon
  • 1 tablespoon Red Star Active Dry Yeast
  • 1 cup raisins

Instructions

  • Have liquid ingredients at 80º F and all others at room temperature. Place ingredients in pan (except raisins) in the order specified in your owner’s manual. Select basic cycle and medium/ normal crust. Raisins can be added 5 minutes before the end of the last kneading. Do not use the delay timer. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. Remove bread when cycle is finished; cool on wire rack before slicing.
