The dough seems dry when mixing begins, but as the process continues, cottage cheese and carrots release moisture and a soft dough forms. The bread has a tender-texture with orange flecks throughout-quite interesting, very tasty.
Have liquid ingredients at 80°F unless otherwise specified in your manual; all others at room temperature.
Add ingredients in order recommended by bread machine manufacturer. Select Basic Cycle and medium/normal crust. Do not use the delay timer. Mixture is very dry as kneading begins. Check dough consistency after 10 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time.
When cycle is complete, carefully remove bread from pan; let cool on wire rack before slicing.
