Gluten Free Walnut Honey Bread

With the combination of honey and walnut, the taste and texture is just like wheat bread.

Yield 1 (9x5-inch) loaf

Ingredients

  • 1 1/4 cups warm water (110-115°F)
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
  • 3 large eggs (room temperature)
  • 3 tablespoons vegetable oil
  • 3 tablespoons honey

Dry Mixture

  • 1 1/2 cups garfava bean flour
  • 2/3 cup corn starch
  • 1 cup tapioca flour
  • 1 tablespoon xanthan gum
  • 1 1/2 teaspoons table salt
  • 1/4 cup walnuts (ground)

Instructions

  • Prepare pan: Grease a 9x5-inch loaf pan; set aside.
  • Add warm water to stand mixer bowl. Stir in yeast; let sit 5-10 minutes.
  • Add eggs, oil and honey to yeast mixture. Using paddle attachment, mix until blended.
  • In a medium bowl, whisk together all dry mixture ingredients until thoroughly combined. With mixer on low speed, gradually add the dry mixture to the wet mixture; mix until well blended. On medium speed, beat about 5 minutes. Pour batter into pan. Cover; allow to rise approximately 1 hour.
  • Preheat oven to 350°F.
  • Bake for 45-50 minutes; use a toothpick to test for doneness. When baking is complete, remove pan from oven and wait for 10 minutes before removing the bread from pan. Cool on wire rack before slicing.
