Bread Machine Classic Country Bread

This classic country yeast bread is made in a bread machine. Savor the subtle, nutty flavor of this hearty loaf.

Yield 1 loaf

Ingredients

Small (1 pound) Loaf

  • 3/4 cup plus 2 tablespoons water
  • 2 teaspoons vegetable oil
  • 3 tablespoons molasses
  • 1 1/3 cups bread flour
  • 2/3 cup whole wheat flour
  • 1/3 cup quick oats
  • 1 1/2 teaspoons table salt
  • 1 1/2 teaspoons Red Star Active Dry Yeast
  • 2/3 cup walnuts

Medium (1 1/2 pound) Loaf

  • 1 cup plus 1 tablespoon water
  • 1 tablespoon vegetable oil
  • 1/4 cup molasses
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 1/2 cup quick oats
  • 2 teaspoons table salt
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
  • 3/4 cup walnuts

Large (2 pound) Loaf

  • 1 1/2 cups water
  • 2 tablespoons vegetable oil
  • 1/3 cup molasses
  • 2 1/2 cups bread flour
  • 1 1/3 cups whole wheat flour
  • 2/3 cup quick oats
  • 2 1/4 teaspoons table salt
  • 1 tablespoon Red Star Active Dry Yeast
  • 1 cup walnuts

Instructions

  • Have liquids at 80°F and all other ingredients at room temperature.
  • Place ingredients in pan in the order recommended by the bread machine manufacturer. Select Basic or White Bread cycle and medium/normal crust. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time.
