No Knead Prune and Spice Bread
Studded with chewy prunes and warm spices, this easy no knead bread is perfect for breakfast.
- 3 cups bread flour
- 3 tablespoons granulated sugar
- 1 1/2 teaspoons table salt
- 1/4 tablespoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon cloves
- 1 cup water (110-115°F)
- 2 (0.25oz each) packages (14g) or 4 1/2 teaspoons Red Star Active Dry Yeast
- 2 tablespoons shortening or butter, softened
- 1 large egg
- 1/2 cup unsweetened prunes (drained, chopped & cooked)
Add flour, sugar, salt and spices to a mixing bowl; whisk to combine. Set aside.
Add warm water and yeast to a stand mixer bowl; let sit 5 minutes. Add the shortening, egg, and ½ of the flour-mixture. Using a paddle attachment, beat 2 minutes on medium speed until smooth. Add the remaining flour mixture and prunes; mix on low speed until smooth, about 1 to 1½ minutes. Scrape down batter from sides of bowl. Cover; let rise in warm place until doubled, about 45 minutes. For hand mixing: following above steps, mix ingredients in large mixing bowl using a wooden spoon or dough whisk. Meanwhile grease one 5x9-inch OR 4½x8½-inch loaf pan.
Beat down raised batter in about 25 strokes using a wooden spoon or dough whisk. Note that this is a thick, somewhat sticky batter. Spread evenly in the prepared pan. Tap pan on table to settle the batter. Cover; let rise only until edges of batter come to within 1-inch of top of large pan or reach top of smaller pan, about 30 minutes.
Preheat oven to 375°F.
Bake 40 to 50 minutes or until well browned on sides and top. Remove from pan and cool on rack. Brush with butter, if desired.
