Whole Wheat Cottage Cheese Rolls

The cottage cheese blends in quickly with the other ingredients, making for light, fluffy rolls.
Yield 24 rolls

Ingredients

  • 1 1/2 cups bread flour
  • 1 tablespoon Red Star Active Dry Yeast
  • 1/4 cup brown sugar
  • 2 teaspoons table salt
  • 1/2 teaspoon baking soda
  • 1/2 cup water
  • 2 tablespoons unsalted butter (room temperature)
  • 1 1/2 cups cottage cheese
  • 2 large eggs
  • 2 cups whole wheat flour

Instructions

  • In stand mixer bowl, add 1 cup bread flour, yeast, sugar, salt and baking soda; mix well. In saucepan or microwave-safe dish, heat water, butter and cottage cheese to 120-130°F (butter does not need to melt). Add to flour mixture. Using a paddle attachment, beat on medium speed for 4 minutes. Add eggs; beat 1 minute.
  • Switch to dough hook attachment. Gradually stir in whole wheat flour and enough remaining bread flour to make a firm dough. Knead until smooth and elastic, about 5 to 7 minutes.
    (NOTE: For hand mixing: following above steps, mix ingredients in large mixing bowl using a wooden spoon or dough whisk. Knead on floured surface until smooth and elastic.)
  • Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until indentation remains after poking dough with finger down to second knuckle, about 1 hour.
  • Prepare pans: Grease two 8x8-inch pans; set aside.
  • Turn dough onto lightly floured surface; punch down to remove air bubbles. Divide dough into 4 equal parts. Divide each part into 6 pieces. Shape each piece into a smooth ball. Place in prepared pans. Cover; let rise until indentation remains after touching.
  • Preheat oven to 375º F.
  • Bake 12 to 15 minutes. Brush with melted butter. Remove from pans and cool.

Rolls may be made ahead by baking in a preheated 400ºF oven 15 minutes. Remove from pan; cool. Wrap tightly and freeze for later use. To serve, thaw, then bake in a preheated 425º F oven 7 minutes.
