Rich Refrigerator Rolls
Yield 16 rolls

Ingredients

  • 3 1/2 cups bread flour
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Platinum Yeast
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 cup water
  • 1 large egg
  • 3 tablespoons butter

Instructions

  • Heat water and butter in pan or microwave-safe dish to 120-130°F. Add to stand mixer bowl. Add 1 cup flour, yeast, salt and sugar. Using paddle attachment, mix for 4 minutes on medium speed. Add egg; beat 1 minute. Switch to dough hook. Gradually add remaining flour and knead until dough is smooth and elastic, about 5 to 7 minutes.
  • Place dough in lightly oiled bowl and turn to grease top. Cover with plastic wrap or foil. Refrigerate 6 to 12 hours. The dough may need to be punched down in a couple hours so it doesn't come up over the bowl.
  • Remove dough from refrigerator, punch down, and allow to rest for 10 minutes before shaping. Divide dough into 4 parts. Divide each forth into 4 pieces and shape into rolls. Place rolls 2 to 3 inches apart on greased cookie sheets. Cover; let rise at in a warm place until indentation remains on roll when lightly touched with your finger.
  • Preheat oven to 400°F.
  • Gently brush egg wash over top of rolls. Sprinkle with sesame seeds, if desired. Bake for 8 to 10 minutes. Serve warm or cold.
