Sourdough English Muffins
Full of nooks and crannies, these homemade English muffins will turn any morning into a special day.

Ingredients

  • 3 cups bread flour
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup Sourdough Starter
  • 1/2 cup warm water (120-130°F)
  • 2 tablespoons vegetable oil

Instructions

  • In stand mixer bowl, add 1 cup flour, yeast, sugar and salt; mix well. Add sourdough starter, warm water and oil to flour mixture. Using a paddle attachment, blend on low speed for 30 seconds; beat on medium speed for 4 minutes.
  • Switch to dough hook attachment. Gradually stir in enough remaining flour to make a firm dough. Knead until smooth and elastic, about 5 to 7 minutes.
    (NOTE: For hand mixing: following above steps, mix ingredients in large mixing bowl using a wooden spoon or dough whisk. Knead on floured surface until smooth and elastic.)
  • Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until indentation remains after poking dough with finger down to second knuckle, about 1 hour.
  • On surface dusted with cornmeal, roll dough to 1/4-inch thickness. Cut into 14 to 16 circles (3 to 4 inches in diameter). Turn to coat topside with cornmeal. Place on greased cookie sheet. Cover; let rise until indentation remains after touching.
  • Preheat griddle to 325°F.
  • Carefully place muffins on preheated electric griddle or fry pan. Bake 10 minutes on each side or until sides are deep golden brown. Cool on wire rack. To serve, split and toast.

can you use the red star sourdough yeast?

The Platinum Instant Sourdough Yeast is meant to be substituted for 1 packet (or 2 1/4 teaspoons) dry yeast in a recipe. It gives a sourdough flavor to your favorite yeast recipes. I hear what Carol said, but I used it in the sandwich bread recipe and I also cut the recipe in half to make only one loaf. When the dough is on the hook, just be sure you have added enough flour that it’s not sticky. It worked like a charm.

Are you going to be adding instructions for your sourdough yeast instructions to your recipes? I understand that I replace the package for the yeast and the starter but do I need to replace the liquid?

The Platinum Instant Sourdough Yeast is not meant to replace an actual sourdough starter. Use this yeast in a ‘regular’ recipe that calls for 1 packet (or 2 1/4 teaspoons) of dry yeast. It will add sourdough flavor to your favorite recipes. are these made in the pan on the stove top or in the oven? the recipe says bake them but it seems as if they are baked on the stove top

Yes, the English muffins are baked on the stove top in a fry pan (already warmed), or on a preheated electric griddle.

This recipe is amazing. Easy and very tasty. Did not have a lot of nooks and crannies, but flavor could not be beat.

Make it a higher hydration and be sure to let rise at its max. You will then get the nooks and crannies
