Ingredients

  • 1 1/4 cups water (110-115°F)
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Active Dry Yeast
  • 3 large eggs (room temperature)
  • 3 tablespoons vegetable oil
  • 3 tablespoons honey

Dry Mixture

  • 1 1/2 cups garfava bean flour
  • 1/3 cup rice flour
  • 2/3 cup tapioca flour
  • 1/2 cup cornstarch
  • 1 tablespoon xanthan gum
  • 1 1/2 teaspoons table salt

Instructions

  • Prepare pan: Grease a 12 cup muffin pan; set aside.
  • Add warm water to stand mixer bowl. Stir in yeast; let sit 5-10 minutes.
  • Add eggs, oil and honey to yeast mixture. Using paddle attachment, mix until blended.
  • In a medium bowl, whisk together all dry mixture ingredients until thoroughly combined. With mixer on low speed, gradually add the dry mixture to the wet mixture; mix until well blended. On medium speed, beat about 5 minutes.
  • Spoon batter into greased bread muffin cups; allow to rise approximately 30 minutes.
  • Preheat oven to 375°F.
  • Bake for 15 minutes; until tops are golden brown. Serve warm.

Can we use an egg replacer of any kind? Allergy to egg makes baking difficult.
