European Whole Wheat Bread
This 100% whole wheat bread is flavored with molasses and cinnamon, and studded with walnuts and raisins for a deliciously healthy loaf.

  • 3 cups whole wheat flour, divided
  • 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Quick Rise Yeast
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons fine salt
  • 3/4 cup plus 3 tablespoons water
  • 3 tablespoons vegetable oil
  • 3 tablespoons molasses
  • 1 large egg white
  • 1/2 cup walnuts
  • 1/2 cup raisins

Instructions

  • In stand mixer bowl, add 1 cup flour, yeast, cinnamon and salt; mix well. In saucepan or microwave-safe dish, heat water, oil and molasses to 120-130°F. Add to flour mixture. Using a paddle attachment, blend on low speed for 30 seconds; beat on medium speed for 4 minutes. Add egg white; beat 1 minute.
  • Switch to dough hook attachment. Gradually stir in walnuts, raisins, and enough remaining flour to make a firm dough. Knead until smooth and elastic, about 5 to 7 minutes.
    (NOTE: For hand mixing: following above steps, mix ingredients in large mixing bowl using a wooden spoon or dough whisk. Knead on floured surface until smooth and elastic.)
  • Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until indentation remains after poking dough with finger down to second knuckle.
  • Turn dough onto lightly floured surface; punch down to remove air bubbles. Shape into a round loaf. Place on greased cookie sheet. Cover; let rise in warm place until indentation remains after touching.
  • Preheat oven to 375°F.
  • With a very sharp knife or bread lame, make 3 or 4 slashes, 1/4-inch deep on top of loaf; cut crosswise, to make a crisscross design. Bake for 30 to 40 minutes. Remove from pan; cool on wire rack.

For a crusty loaf: Place a metal broiler tray on bottom oven rack before preheating oven. After placing loaf in oven to bake, quickly and carefully pour 1 cup hot water into broiler tray and close oven door. Bake as directed.
Make dinner rolls: This recipe will also make 12 to 16 dinner rolls. After 1st rise, punch down dough and divide dough into 12-16 evenly-sized balls; shape into rolls. Place on parchment or silicone-lined baking sheet. Cover and let rise until indentation remains after lightly touching. Bake dinner rolls 12 to 15 minutes at 350°F.

This is a delicious whole-grain loaf. The molasses and cinnamon are in perfect balance, and the crumb is tender. I used golden raisins and soaked them in orange liqueur.

European WW bread- is suppose to be 3cups or 4cups of WW flour?

The recipe is now corrected. Use 3 cups of whole wheat flour for the medium loaf size recipe.
