Ingredients

  • 4 cups bread flour, divided
  • 2 (0.25oz each) packages (14g) or 4 1/2 teaspoons Red Star Active Dry Yeast
  • 1/3 cup granulated sugar
  • 1 tablespoon fine salt
  • 1 tablespoon orange zest
  • 2/3 cup milk
  • 1 cup water
  • 2/3 cup vegetable oil
  • 4 large eggs
  • 2 cups whole wheat flour
  • 2/3 cup chopped walnuts
  • 1 1/2 cups craisins

Orange Glaze

  • 1/2 cup powdered sugar
  • 1/2 teaspoon orange zest
  • 1/8 teaspoon vanilla
  • 2 to 3 teaspoons orange juice

Instructions

  • In stand mixer bowl, add 3 cups bread flour, yeast, sugar, salt and zest; mix well. In saucepan or microwave-safe dish, heat milk, water and oil to 120-130°F. Add to flour mixture. Using a paddle attachment, blend on low speed for 30 seconds. Add eggs; beat on medium speed for 3 minutes.
  • Switch to dough hook attachment. Gradually stir in whole wheat flour, walnuts, craisins and enough remaining bread flour to make a firm dough. Knead until smooth and elastic, about 5 to 7 minutes.
    (NOTE: For hand mixing: following above steps, mix ingredients in large mixing bowl using a wooden spoon or dough whisk. Knead on floured surface until smooth and elastic.)
  • Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until indentation remains after poking dough with finger down to second knuckle, about 1 hour.
  • Turn dough onto lightly floured surface; punch down to remove air bubbles. Divide dough into 2 equal pieces. Roll or pat each piece into a 14×7-inch rectangle. Starting with shorter side, roll up tightly, pressing dough into roll. Pinch edges and taper ends to seal. Place in prepared pan. Cover; let rise until indentation remains after touching.
  • Preheat oven to 375°F.
  • Bake for 35 to 40 minutes. Remove from pan; cool on wire rack.
  • Prepare orange glaze: Whisk all ingredients together in a small bowl. Add additional orange juice if needed to achieve desired consistency.
  • Just before serving, drizzle glaze over loaf. Slice and serve.

This bread is fantastic. We love it and I am planning to make it again soon. It was good out of the oven and the next day it was still soft and moist. We enjoyed it toasted as well.
